Kuti Mashi’s Feel Better Chicken

When I was young my family would go to India to visit about every 3-4 years.  My aunt – Kuti Mashi used to make me an awesome chicken dish that would settle my stomach when it was upset.  This week my partner Jen has had stomach issues from antibiotics, so I decided to recreate the recipe from memory.  I think I came pretty close.

Kuti Mashi’s Feel Better Chicken

5 boneless chicken thighs

1 white onion or large leek, chopped

1 green pepper chopped

1 cup of pearl onions

1 inch of ginger, peeled and grated

2-3 cloves of garlic minced

½ cup white wine

½ cup chicken broth

Salt and pepper to taste

1 tablespoon vegetable oil

3 tablespoons of chopped parsley or cilantro

  1. In a large frying pan heat oil over medium high.
  2. Add chicken and brown on one side for about 5 minutes, chicken will release easily from pan.
  3. Brown other side for about 2 minutes and remove from pan.
  4. Place onions, green peppers, garlic, and ginger in pan and sauté for about 3 minutes.
  5. Put chicken, broth, and wine in pan, cover and lower heat to medium.
  6. Simmer for 15-20 minutes.
  7. Pour in a mixture of 2 teaspoons of cornstarch mixed with 1 tablespoon of cold water and bring to a boil. If sauce is too thick add some more chicken broth, ¼ cup at a time until desired consistency is reached.
  8. Stir in parsley or cilantro.
  9. Serve over rice.
